High Protein Lemon Meringue Roll

Ingredients (1 big roll):
Base:
225 ml egg whites
1/2 tsp cornstarch (or cream of tartar)
Dash sweetener
1/2 tsp vanilla extract
Pinch salt
Filling:
150 g 0% Greek yogurt
30 g light cream cheese
Lemon zest (≈1 tsp or more)
Squeeze lemon juice
Dash sweetener
Pinch salt

Whip egg whites until foamy
Add cornstarch + salt, continue whipping to stiff peaks
Add vanilla + sweetener briefly
Spread onto lined tray
Bake 200°C (400°F) for 8–10 mins until lightly golden
Turn oven off, leave door open for ~2 mins
Let it cool slightly
Mix filling ingredients
Spread over base, roll it up
