1 box vanilla cake mix (plus ingredients required to make the cake)

1 (15 oz) container ricotta cheese

1 (8 oz) container mascarpone cheese

1 cup powdered sugar

1 tsp vanilla extract

1/2 cup mini chocolate chips

1/2 cup heavy cream

1/4 cup mini chocolate chips (for topping)

Powdered sugar, for dusting

Prepare the Cake:

Preheat your oven according to the instructions on the cake mix box.

Prepare the cake batter according to the package directions and bake in a 9x13-inch baking pan.

Once baked, remove the cake from the oven and allow it to cool for about 10 minutes.

Poke the Cake:

Using the handle of a wooden spoon or a skewer, poke holes all over the cooled cake, making sure to go about halfway down into the cake.

Make the Cannoli Filling:

In a medium bowl, combine the ricotta cheese, mascarpone cheese, powdered sugar, and vanilla extract. Mix until smooth and well combined.

In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the ricotta mixture.

Fill the Cake:

Spread the cannoli filling evenly over the cake, pressing it into the holes you made. Make sure the filling is spread out evenly across the entire surface.

Add the Chocolate Chips:

Sprinkle mini chocolate chips evenly over the top of the cake.

Chill the Cake:

Cover the cake and refrigerate for at least 2 hours to allow the flavors to meld and the cake to set.

Serve:

Before serving, dust the top of the cake with powdered sugar for a finishing touch. Slice and enjoy the creamy, cannoli-inspired goodness!
