Creamy Asiago Chicken Pasta with Sun-dried Tomatoes and Spin

LEANGREDIENTS
1 box chickpea pasta (my fav is @chickapeapasta)
2 chicken breasts sliced in half, chopped
3 garlic cloves
1 teaspoon paprika
1 cup half & half
1/2 teaspoon salt
1 cup shredded Asiago cheese, divided
2 cups fresh spinach
1/3 cup sun-dried tomatoes
LEANSTRUCTIONS

Cook pasta according to box
Add olive oil and garlic and sun-dried tomatoes to a large sauce pan
Add in chicken and cook until no longer pink
Add in paprika, salt & pepper
Once the chicken is completely cooked, pour in your half & half cream And bring to a boil
Add 1/2 the Asiago cheese and stir until completely melted
Add more cheese gradually if you would like the sauce thicker, if the sauce is too thick, and more half & half cream
Add cooked and drained pasta to the sauce
Add spinach and and mix until it’s wilted
