Strawberry Streusel Coffee Cake

1 ½ cups sliced strawberries

2 tbsp flour

Streusel

2/3 cup all purpose flour

1/3 cup packed brown sugar

3 tbsp oil

Cake

Rind and juice of 1 large lemon

1 cup sugar

2 eggs

½ cup oil

2/3 cup light sour cream or Greek yogurt

2 tsp vanilla

2 cups white flour

2 tsp baking powder

½ tsp baking soda

1/8th tsp salt

Slice each strawberry into 3 or 4 pieces strawberries and dust with flour.

Streusel: in a bowl add flour, brown sugar and oil, mix until crumbly. Set aside.

In a large bowl add grated lemon, lemon juice, sugar, eggs, oil and mix well.

Add sour cream, vanilla and flour, baking powder, baking soda, and salt and mix until combined.

Fold in strawberries, then pour half of the mixture into a 9” springform pan sprayed with oil and sprinkle with half of the streusel, then add remaining batter and top with remaining streusel.

Bake at 350 for 45 – 50 minutes or until a tester comes out dry. Enjoy!
