Stuffed Breakfast Potato

3 large baking potatoes, washed

1 ½ cups Egg Beaters or 6 eggs

1 cup Marias Salsa

1 4-ounce can diced green chiles, optional

1 cup low sodium shredded cheddar cheese, divided

Cook potatoes in microwave until fork tender. Cut potatoes in half lengthwise; spoon out center, leaving ¼ to ½ inch shell. Set aside and keep warm.

In bowl, whisk eggs, hot sauce, and chilles.

Lightly spray a nonstick skillet with nonstick cooking spray and scramble egg mixture over medium heat until firm.

Stir in reserved potatoes and ¾ cup cheese.

Spoon egg potato mixture into each potato half and sprinkle with remaining cheese.

Microwave stuffed potatoes for 2 minutes; sprinkle cheese on top and microwave 30 seconds or until cheese is melted.

Serve immediately. Serves 6.
