My Slow Cooker Beef Curry, the beef literally melts in your mouth in this recipe its creamy it has a kick and it tastes delicious. The perfect Friday night curry, this one is a must try lets go:
Ingredients: Serves 5 (446 and 45.8g protein per serving)
1 large onion chopped
4 garlic cloves minced
1 tbsp ginger minced
1 bell pepper chopped
2 red chillis (add a third if you like it extra spicy)
3 tbsp madras curry paste (I used madras as I like the heat, you can use a milder curry paste if preferred)
1 tbsp cumin
1 tsp coriander powder
1 tbsp curry powder
2-3 curry leaves or 1-2 bay leaves
400ml coconut milk
125ml beef stock
1 tbsp tomato puree
1 tsp sugar
750g stewing beef
1 tbsp cornflour
1 tsp olive oil
Garnish:
Handful fresh coriander
Freshly chopped chilli (optional)

In a pan brown off your beef in 1 tsp olive oil and 1 tbsp cornflour for 2-3 mins.
Add to the slow cooker pot along with the rest of the ingredients, mix together and season well then cook for 4 hours on high or 8 hours on a low and you’re ready to tuck in. Serve with fluffy rice and a cold beer and enjoy!
