Chicken Muffins

250g chicken mince
½2 tsp paprika
¼ tsp garlic granules
½ tsp dried oregano
Pinch each of salt and ground black pepper
Olive oil spray
2 English muffins, toasted
20g tomato ketchup
Handful of baby spinach leaves
2 slices of Cheddar

Preheat your air fryer to 180°C. Add the chicken mince to a bowl with the paprika, garlic granules, dried oregano and salt and pepper; use your hands to mix it together well. You want to mix it for a few minutes, as it'll help the texture of the final patties.
Wet your hands to prevent them sticking, and divide the mixture into 2 large patties. Line your air fryer with a silicone liner or baking paper, then add the patties. Spray well with oil spray and air-fry for 15-20 minutes, turning them over halfway, until fully cooked through.
To each toasted muffin base add the ketchup, some spinach, a chicken patty and a slice of cheese, then top with the muffin tops.
Either enjoy immediately or wrap in foil and place in a sealed container in the fridge for up to 4 days or in the freezer for up to 2 months. If eating straight away, you can pop the whole thing into the air fryer or microwave briefly to melt the cheese.

Sometimes only a properly savoury breakfast will do, so for those occasions, these chicken sausage muffins are the dream. They are full of tasty protein and are so easy to make ahead: simply grab one from the fridge when you're hungry, and enjoy within 5 minutes.
