Lemon Herb Chicken Thighs and Caesar Brussels Sprouts Salad

Recipe:
2 Lbs Chicken Thighs:
3 Tbsp olive oil
1 tsp onion powder
1 tsp garlic powder
1 tsp red pepper flakes
1 tsp dried oregano
1 1/2 tsp salt
1/2 tsp pepper
1 lemon, zested
1/2 a lemon, squeezed

Preheat oven to 425°F. Add olive oil, seasonings, lemon zest and juice to a bowl. Mix. Add chicken and coat all sides. Place chicken in an oven safe baking dish and cook for 30-40 minutes, until internal temperature reaches 165°F and skin is crispy.
1 Lb Mini Red Potatoes:
2 Tbsp olive oil
1 tsp paprika
1 tsp onion powder
1 tsp garlic powder
1 tsp salt
1/4 tsp pepper
Cut potatoes in half and add to a pot with water. Season with salt and boil until almost fork tender. Drain and place potatoes on a baking sheet. Cover potatoes with olive oil and seasonings. Bake in the preheated oven for 20-25 minutes or until they reach desired crispiness.
Caesar Brussels Sprout Salad:
2 Lbs brussels sprouts, finely chopped
Crouton Crumbs:
1/2 a baguette, cut into cubes
2 Tbsp olive oil
1/4 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder
Add bread to a bowl and coat with olive oil and seasonings. Pour onto a baking sheet and bake for 8-10 minutes, until crispy and golden. In a food processor, add croutons and pulse to create crouton crumbs.
Caesar dressing:
1 tsp anchovy paste
2 tsp dijon mustard
5 garlic cloves, minced
1/2 cup mayonnaise
1 tsp Worcestershire sauce
1/4 cup lemon juice
3/4 cup Parmigiano-Reggiano, grated
1/4 tsp salt
1/4 tsp pepper
In a bowl, add anchovy paste, mustard, and garlic. Whisk together. Add mayo, Worcestershire sauce, lemon juice, 1/2 cup Parmigiano-Reggiano, salt, and pepper. Whisk until fully combined.
In a large bowl, add Brussels sprouts and toss in Caesar dressing, crouton crumbs, and remaining Parmigiano-Reggiano. Enjoy!
