Creamy Garlic & Herb Chicken Taquitos

Olive oil spray
600g boneless, skinless chicken breast, diced
Good pinch each of salt and ground black pepper
4 garlic cloves, crushed
2 tsp dried basil
2 heaped tsp dried mixed
Italian herbs
250g baby spinach leaves
240g light cream cheese
160g grated mozzarella
12 mini flour tortilla wraps

Heat a frying pan over a medium heat, spray well with oil spray, then add the chicken with the salt and pepper. Fry for 6-8 minutes, or until almost cooked through.
Add the garlic, dried basil and dried mixed herbs and allow to cook for a further few minutes until the garlic is fragrant. Add the spinach, allow to wilt, then remove from the heat.
Add your cooked chicken to a bowl with the cream cheese and mozzarella and mix until well combined.
Preheat your air fryer to 190°C.
Place a large spoonful of the chicken mixture along the centre of a wrap, then roll it up tightly into a cylindrical shape. Repeat with the remaining tortillas and filling. Place the tortillas in your air fryer, spray well with oil spray, then air-fry for 6-8 minutes, or until golden and crispy. Serve immediately.

These creamy chicken taquitos are super easy to make. The air fryer makes the tortillas extra crispy - the contrast between the crunchy outside and the gooey, cheesy middle is delicious. The recipe should make 12 taquitos (3 per serving).
