Quorn Rice

1 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, minced
1 red pepper, diced (optional)
300g Quorn pieces (frozen or chilled – no need to pre-cook)
1 tsp dried oregano or Italian herbs
1/2 tsp smoked paprika (optional, not spicy)
1/2 tsp salt + black pepper to taste
150g long grain or basmati rice (about ¾ cup)
1 tin (400g) chopped tomatoes
Small tin sweetcorn
400ml vegetable stock (or water + stock cube)
1 tsp sugar or splash of balsamic vinegar (to balance acidity)

1. Sauté veg
Heat the olive oil in a large, deep pan with a lid. Cook the onion and red pepper over medium heat for 6–8 minutes until soft.
2. Add Quorn seasonings
Stir in the Quorn pieces. Cook for 3–5 minutes to start browning slightly. Then add garlic, herbs, smoked paprika, salt, and pepper. Stir and cook for another minute.
3. Add rice and liquids
Add the rice and stir for 1 minute so it lightly toasts. Then pour in the chopped tomatoes, vegetable stock, and sugar/balsamic. Stir well to combine.
4. Simmer
Bring to a gentle boil. Cover with a lid and reduce the heat to low. Let it simmer for 20–25 minutes, stirring occasionally. Add a splash more stock or water if it starts to dry out before the rice is tender.
5. Finish and enrich
Once the rice is fully cooked and everything is saucy and thick, stir in any optional extras (like peas or spinach). For extra creaminess, stir in a spoonful of oat cream or hummus at the end.
6. Rest
Let it sit for 5 minutes off the heat to allow the rice to finish absorbing the flavour.
