Pollo Pesto Pasta

500g boneless, skinless chicken breast, diced
1 red onion, sliced
80g pesto
4 garlic cloves, crushed
300g dried penne
500ml chicken stock
50g light cream cheese
20g Parmesan, grated
60g grated mozzarella

Add the chicken, onion, pesto and garlic to your slow cooker. Mix well and
cook on high for 3 hours.
After 3 hours, shred your chicken slightly using 2 forks, then add the pasta and stock. Cook on high for 30-35 minutes, until the pasta is tender. It may take a little longer depending on your slow cooker.
Once your pasta is cooked, stir through the cream cheese and Parmesan, then sprinkle over the mozzarella. Turn the slow cooker off and pop the lid back on for a couple of minutes to allow the cheese to melt, then serve.
