120g plain flour, plus extra
for dusting
120g 0% fat Greek yoghurt
1 tsp baking powder
Olive oil spray
80g strawberry jam
20g granulated sweetener
10g light butter, melted

Add the flour, yoghurt and baking powder to a bowl and, using a wooden spoon, combine until you have a shaggy dough. Use your hands to bring it together into a smooth, round ball of dough. If it feels a little sticky, add a sprinkle more flour.
Flour your work surface lightly, divide the dough into 4 equal pieces, and roll each piece into a rough circle (around the thickness of a pound coin).
Preheat your air fryer to 180°C and spray the base well with oil spray.
Spoon 20g of the jam into the centre of each round of dough, then gently bring up the sides and pinch together to seal the jam fully inside and form
your doughnut shape.
Place the doughnuts in the air fryer, with the join underneath. Spray each with some oil spray and air-fry for 15 minutes, or until golden brown, turning them over halfway through so they brown evenly.
Place the sweetener on a flat plate. While the doughnuts are still hot, brush lightly with the melted butter then gently roll each doughnut in the sweetener.
Set aside to cool for 5 minutes before serving, as the jam will be MOLTEN.
