Burger Bowl

For the Beef
- 1 lb extra-lean ground beef
- sea salt
- salt, pepper, onion/garlic to your liking
For the Roasted Potatoes
- 2 medium russet potatoes, peeled and diced
- 1/2 tsp smoked paprika
- 1/2 tsp olive oil
- salt/pepper as your heart desires
Other Bowl Ingredients
- 6 cups chopped romaine
- 1 cup grape tomatoes
- 1/2 cup pickles
- 1/2 cup shredded cheddar and monterey jack
- 1/2 medium red or yellow onion, sliced and sauteed
- 1/2 cup sliced pepperoncini
- 2 tbsp sesame seeds
For the Burger Sauce
- 1/4 cup nonfat greek yogurt
- 2 tbsp light mayo
- 1.5 tbsp ketchup
-1.5 tsp yellow mustard
- 1/2 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp chili powder
- 1 tsp pickle juice
- genrous shakes of salt and black pepper

1. Roast the Potatoes: preheat oven to 425 F. Toss diced potatoes with oil, smoked paprika, garlic powder, black pepper, and salt. Spread on a lined sheet. Roast 20-25 minutes, tossing once, until golden and crispy.
2. Cook the Beef: Heat a skillet over medium-high heat. Add ground beef, breaking up with a spoon. Add all seasonings - salt, pepper, garlic powder, smoked paprika, onion powder, oregano, and chili flakes. Cook, stirring, until fully browned and deepy fragrant. Drain excess fat.
3. Sautee the Onions: In a separate pan, lightly spray with oil. Sautee onions with a pinch of salt and pepper over medium heat until soft.
4. Make the Sauce: Mix together Greek yogurt, ketchup, mustard, paprika, garlic powder, chili powder, pickle juice, salt and pepper.
5. Assemble the Bowls: Layer chopped romaine in each bowl. Top with ingredients, drizzle sauce on top, sprinkle with sesame seeds. Serve immediately.
