1 gallon water

1 cup kosher salt

1 cup brown sugar

2 bottles of beer

Ice

3 Bay Leaves

Peppercorns

Coriander seeds

Heat water to dissolve salt and sugar.

Cool water with ice and 2 bottles of beer in order to make 2 gallons.

Add 3 Bay leaves

Add a palmful of peppercorns and a palmful of coriander seeds

Brine turkey for 8- 10 hours
