2-3 lbs top round or bottom round roast

2-3 lbs chuck or sirloin with good marble

RUB (BEFORE SEAR):

1 tsp ground pepper

1 tsp crushed red pepper

1 tsp basil

1 tsp oregano

1 tsp Italian seasoning

1 tsp salt

1 tsp celery salt

SEASONING IN CROCK POT:

2 tsp salt

2 tsp peppercorn

2 tsp crushed red pepper

2 tsp basil

2 tsp oregano

2 tsp italian seasoning

3 bay leaves

2 cups water

4 cloves garlic

Add rub (except salts) to meat night before and place in gallon ziplock bag.

In the morning, take out meat and let sit out for 30 minutes.

Add salt to meat as rub.

Add olive oil to skillet/griddle and turn to high heat.

Sear all sides for 1 minute.

Add water to crockpot and turn on low.

Add 1/3 of crockpot spices.

Add first cut of meat.

Sprinkle 1/3 of crockpot spices on top.

Add second cut of meat.

Sprinkle rest of crockpot spices on top.

Cook on low for 9 hours.

At 8 hour mark, take meat out and shred.

Put meat back in 1 or 2 more hours.
