Courgette Fries

Olive oil spray
40g plain flour
60g panko breadcrumbs
60g Parmesan, grated
2 eggs
2 isp dried mixed Italian herbs
½2 tsp garlic granules
2 courgettes, cut into fries
1.5-2cm thick
Salt, for sprinkling
100g tomato pasta sauce (shop-bought), to serve

Preheat your air fryer to 200°C and spray the base with some oil spray.
Spread the flour onto a flat plate. On a second plate, mix the breadcrumbs with the Parmesan. In a bowl, lightly beat the eggs with the mixed herbs and garlic granules.
Dip each courgette piece first into the flour, then in the beaten egg, and then in the Parmesan breadcrumbs. Be sure to press the breadcrumbs onto the fries so they stick. Repeat until all the pieces are coated.
Add the courgette fries to the air fryer, making sure there is plenty of space between them so the air can circulate (cook in batches if needed). Spray them with oil spray and air-fry for 10-12 minutes until crisp and golden.
Serve straight away, sprinkled with salt, with the pasta sauce on the side for dipping.

These are such a fab, quick snack or side and are ready to be enjoyed within 15 minutes. I serve mine with some pre-made pasta sauce. but they're fabulous on their own, with ketchup, or even with some garlic mayonnaise.

It is so important not to overcrowd your air fryer, as too much moisture will build up. Similarly, don't salt these fries until serving to keep them crisp.
