2 pounds baby potatoes (halved)
2 tablespoons olive oil
3 tablespoons Dijon mustard
2 tablespoons honey
1 teaspoon garlic powder
1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Prepare the Potatoes: Wash and halve the baby potatoes. Pat them dry with a paper towel to ensure they roast well.
Make the Honey Mustard Glaze: In a large mixing bowl, whisk together olive oil, Dijon mustard, honey, garlic powder, thyme, salt, and pepper.
Coat the Potatoes: Add the potatoes to the bowl and toss until they’re evenly coated with the glaze.
Roast the Potatoes: Spread the potatoes in a single layer on the prepared baking sheet. Roast for 25–30 minutes, flipping them halfway through, until they’re golden brown and tender.
Garnish and Serve: Remove the potatoes from the oven, garnish with fresh parsley if desired, and serve warm.
