Mac & Cheese of Dreams

275ml semi-skimmed milk
275ml chicken (or vegetable) stock
1 tbsp garlic granules
175g dried macaroni
75g reduced-fat Cheddar, grated
15g Parmesan, grated
60g light cream cheese
40g grated mozzarella
Salt and ground black pepper

Add the milk, stock, garlic granules and macaroni to a non-stick (important) deep frying pan and mix well. Bring to the boil and allow to cook for about 10 minutes, uncovered, or until the macaroni is tender, being sure to stir it frequently.
Once the macaroni is tender, remove the pan from the heat and stir in the Cheddar, Parmesan and cream cheese until you have a creamy, smooth sauce. If it's a little thick, add a splash more milk.
Taste and adjust for seasoning, adding salt and pepper as needed, then sprinkle with the mozzarella and place under a hot grill for a few minutes, until the top is golden and bubbling. Serve straight away.

I don't think the wonders of mac + cheese need an introduction, do they. It's one of life's greatest pairings and guaranteed to be a crowd pleaser. This lower-calorie version is everything you want from a macaroni cheese
while being a little lighter - plus it's made in just one pan.
