Sticky Sesame Chicken Strips

2 eggs
1 tsp onion powder
1 tsp paprika
1 tsp garlic granules
Good pinch each of salt and ground black pepper
90g cornflakes
4 large boneless, skinless chicken breasts, cut into thick strips
Olive oil spray
20g light butter
2 tosp honey
2 tbsp low-sugar sweet chilli sauce
60g BBQ sauce
TO SERVE
1 tosp sesame seeds
Sliced spring onions

Preheat your air fryer to 190°C.
Add the eggs, onion powder, paprika, garlic granules, salt and pepper to a bowl and beat to combine.
Spread the cornflakes onto a small plate and, using the palm of your hand, crush them until you have a mix of some larger and some super-fine pieces.
Dip your chicken pieces into your egg mixture, then into the cornflakes, pressing them into the chicken to make sure they stick properly. Transfer to your air fryer, spray well with oil spray and air-fry for 12 minutes, flipping them over halfway, ensuring the chicken is cooked thoroughly.
While the chicken is cooking, combine the butter, honey, sweet chilli sauce and BBQ sauce in a large bowl. Cover and microwave for 90 seconds, stir well, then microwave for another 30 seconds. Once your chicken is cooked, add it into the bowl with the sauce and gently mix to coat.
Top the chicken strips with the sesame seeds and spring onions, then serve.

These sweet and sticky BBQ chicken strips are one of my favourite
high-protein fakeaways. They are great on their own, on a salad, in a wrap, or with some air-fried wedges. A finger lickin' family favourite.
