Bacon & Cheese Breakfast Burrito

2 rashers of streaky bacon

4 frozen hash browns

Olive oil spray

4 eggs, beaten

20g reduced-fat Cheddar, grated

2 large flour tortilla wraps

1 avocado, mashed with the juice of ½ lime

Hot sauce, to serve (optional)

Salt and ground black pepper

Preheat your oven to 200°C/180°C Fan.

Lay the bacon and hash browns on a baking tray and bake for 20-25 minutes, or until both the bacon and hash browns are crispy.

When they are nearly done, heat a non-stick frying pan over a medium heat and spray well with oil spray. Season the beaten eggs with salt and pepper, then add to the pan. Allow the eggs to set slightly on the bottom, then using a spoon or spatula, mix them well until you have scrambled eggs; you want them quite firm. When almost fully done, take off the heat, add the cheese and mix through until melted.

Place a wrap down flat, then spread over half of your mashed avocado. Top with half the cheesy eggs, 2 hash browns and a slice of bacon. Fold in the sides of the wrap, then roll it up to create your burrito. Repeat with the remaining wrap and fillings.

Wipe down the same pan you made the eggs in, spray with a little oil and fry your burritos for a few minutes on each side until golden and crisp. Either enjoy immediately with a dash of hot sauce or wrap in foil and place in a sealed container in the fridge for up to 4 days or in the freezer for up to 3 months.

These breakfast burritos are one of my favourite meal-prep options - you can easily double or triple this recipe. They are EXTRA delicious and pack in a good amount of protein too, so they keep me satisfied for longer. I mean, what isn't great about combining bacon, cheese and hash browns?
