Chocolate Babka Cookies

Soft in the center, crispy on the edges, thick, gooey, and rolled in the perfect babka crumb coating!
Whisk together:
1 cup neutral oil
1 cup brown sugar
½ cup white sugar
Add:
2 eggs + 1 egg yolk

Mix in:
1 tsp baking soda
1 tsp salt
3 tbsp cornstarch
Add: 2½ cups flour
Fold in: 1½ cups chocolate chips
Separate ⅓ of the dough and mix with ¼ cup cocoa powder
Add it back and gently swirl for that perfect babka marble effect.
For the babka crumb:
Mix together
½ cup flour
½ cup sugar
Pinch of salt
¼ cup neutral oil
Scoop large cookies (about 4 tbsp each), roll fully in the babka crumb, and place on a tray.
Freeze for 24 hours ❄️
Bake straight from frozen at 350°F for 14–17 minutes until the edges are golden and the centers are still soft.
Let cool for 10 minutes… if you can wait 😍
