Chimichurri Steak Salad

2 lbs boneless chuck steak

2 cups cherry or grape tomatoes, sliced

1 cucumber, sliced into half coins

½ red onion, thinly sliced

1 can chickpeas, drained and rinsed

2 bundles fresh parsley, finely chopped

1 whole bulb of garlic, finely minced

1 red jalapeño, finely diced (or 1 tbsp red chili flakes)

Salt & pepper to taste

¼ cup rice vinegar (sweeter) or red wine vinegar (more acidic)

1 cup extra virgin olive oil

Season salt, garlic powder & smoked paprika for the steak

1 tbsp butter + 1 tbsp olive oil for cooking

Season chuck steak with season salt, pepper, garlic powder, and smoked paprika

Heat butter and olive oil in a skillet and sear steaks for 5–6 minutes per side for medium well

Let rest for 5 minutes then cut into small cubes

In a large mixing bowl combine parsley, garlic, jalapeño, salt, pepper, vinegar, and olive oil and mix well

Add cucumber, tomatoes, red onion, and chickpeas and toss until everything is coated in the chimichurri

Add the steak bites and mix well

Serve immediately
