Fluffy American Style Pancakes

100g rolled oats
220g cottage cheese (not fat-free; see NOTE)
2 large eggs
2 tosp granulated sweetener
1 tsp vanilla extract
2 tsp baking powder
Olive oil spray
TO SERVE
120g 0% fat Greek yoghurt
Your choice of fresh or frozen berries

Add the oats to a blender and blitz until you have a smooth oat flour. Add the cottage cheese, eggs, sweetener, vanilla and baking powder and blitz again until you have a smooth mix, with no pockets of flour. Don't over-blend, though, just make sure it's all mixed together. Heat a non-stick frying pan over a medium heat and spray with oil spray to coat the pan. When hot, add 3 small separate ladlefuls of your batter and allow the pancakes to cook for about 3 minutes, or until browned on the bottom. Flip and cook for a further minute or two.
Repeat the process with the remaining mixture (you should get 6 pancakes in total), adding another light spray of oil.
Serve topped with the Greek yoghurt, some berries, or any other toppings of choice. If using frozen berries, warm them in a small saucepan first. Enjoy straight away.

One of life's absolute joys is a big stack of fluffy pancakes, and these pancakes give you a protein kick without sacrificing any of the fluffy taste. Serve with Greek yoghurt and some berries for an extra-tasty start to the day. The batter should make about 6 pancakes (3 per serving).
