2 medium potatoes

2 green chillies, or to taste

400g (14oz) baby spinach,

frozen

2 tbsp ghee or ol

½ tsp asafoetida

2 tsp cumin seeds Chilli powder, to taste 1 tsp ground turmeric

2 tsp ginger paste

1 tbsp Greek yoghurt

1 tbsp tomato paste

2 tsp ground coriander

2 tsp dried fenugreek leaves Fine sea salt, to taste

A small bunch of fresh dill Lemon juice, to taste

Serve with

Easy Rotis (see page 157) and Greek yoghurt sprinkled with red chilli flakes (optional)

Fill and boil the kettle.

Peel and dice the potatoes into 1cm (½inch) cubes. Slit the green chillies lengthways.

Remove the spinach from the freezer and crush it in the bag, which saves you chopping it.

Place a wok on a high heat, then add the following ingredients in this order: 300ml (10fl oz/1 cups) hot kettle water, ghee or oil, potatoes, asafoetida, cumin seeds, chilli powder, to taste, turmeric, ginger paste and green chillies. Place a lid on the wok and cook for 5 minutes.

Add the spinach, yoghurt, tomato paste, ground coriander, fenugreek leaves and salt to taste. Stir and cook without the lid on for 5 minutes.

Switch off the heat, then add sprigs of the fresh dill and lemon juice. Stir well, place the lid back on the wok and allow to sit for 1 minute before enjoying.
