Ginger Cake Recipe

125g butter or 100g oil
Around 40g ginger, grated – no need for it to be the perfect measurement and no need to peel it!
125g golden syrup (you could also use ½ cup brown sugar or maple syrup)
1 cup self-raising flour (or 1 cup plain flour and 1 tsp baking powder)
Optional spices – ½ grated nut meg and ½ tsp cinnamon or mixed spice
1/3 cup yogurt (or sour cream)
1 egg

Melt together butter, ginger and golden syrup. Allow to cool down if you are more patient than me!
Whisk together flour and spices. Slowly add and whisk in the melted butter mixture.
Add the yogurt and egg and mix until JUST combined.
Pour into greased and lined mini cake/ muffin pans (it should make 5) or 18cm small cake pan.
For small cakes: 170 for around 15 minutes, until a skewer comes out clean
For a large cake: closer to 30 minutes.
Now I would normally eat this plain as is, but if you want you can make:
For the pears:
Brown 2 tbsp butter, add the zest and juice of 1 orange, 2 tbsp maple syrup or brown sugar and 3 peels and diced pears. Simmer for 5 minutes or until the pears are soft.
For the cream:
Whip together ¾ cup cream, 1/3 cup Crème fraîche and a bit of vanilla!
