High Protein Sweet and Sour Chicken

Chicken
1¾ lbs (790 g) diced chicken breast
1 tbsp (8 g) cornstarch
2 tsp garlic powder
¾ teaspoon salt (and pepper to taste)
olive oil cooking spray
Veggies
1 onion (cut in thick strips)
3 bell peppers (cut into chunks)
Sweet & Sour Sauce
¾ cup (180 g) pineapple juice (or pineapple chunks with juice)
½ cup (120 ml) rice vinegar
6 tbsp (92 g) low-sugar ketchup
4 tbsp (12 g) brown sugar substitute
6 tbsp (90 g) soy sauce
1 tbsp (8 g) cornstarch (for thickening sauce)

4 cups (375g) cooked white rice
Instructions
Prep your rice, use day old rice if possible
Cut chicken into 1-inch cubes. Place in bowl with seasoning and toss until evenly coated
Pre-heat a large wok or deep pan over med-high heat and lightly spray with cooking spray
Cook chicken in batches until cooked through
While chicken cooks, chop veggies
Mix all sweet and sour sauce ingredients except the cornstarch in a separate bowl
Once the chicken is done, in the same pan, add a more cooking spray then stir in the veggies and cook until softened. 3-4 minutes. Set aside with the chicken.
Add sauce mixture to the same pan and bring to simmer over medium heat, stirring constantly.
Once simmering, mix the sauce cornstarch with a bit of cold water and stir it into the pan to thicken the sauce. Keep simmering for another minute until the sauce has thickened.
Return chicken & veggies to pan and toss quickly to coat with sauce.
Serve with your rice or package up into containers.
Notes:
Reduced to 2 bell peppers and swap the rice for cauliflower rice to lower the carbs.
