• 1 large yellow onion (finely chopped)

• Canola oil

• Butter

• 1.5 lbs stew meat

• 1 tsp. turmeric

1 tsp curry powder

• Salt

• Pepper

• 7 bunches of green onions (finely chopped)

7 bunches of parsley (Italian preferred) (finely chopped)

• 5 bunches of cilantro leaves (finely chopped)

• 1/4 c. chives or scallion tops (finely chopped)

• 1.5 T dry fenugreek leaves

(note you can use the food processor - pulse setting)

• juice from ½ lemon

• 4-5 dried persian limes

• 2 cans red kidney beans (1 cup dried black eyed peas peas-boil it for 10 min and turn it off. Drain it after 10 min)

1. Saute the onion over medium-high heat in a couple of tablespoons of canola oil until it is a deep golden brown. Add the meat and turmeric and cook until the meat is browned well on all sides. Add salt and pepper. Cook until tender. If there's lots of liquid from the meat, add 1 T of flour to thicken it up a little.

2. While you are doing step 1, in another pan, fry the herbs until they turn dark green. Stir frequently. If you overcook/blacken them, they will get bitter. (I like to add a little water to it and let it cook longer)

3. Add the herbs to the meat & onion mixture, stirring well. Add 1.5 - 2 cups of water (you want a "slurry", but not "soupy" mixture). Season with more salt. Add the lemon juice, turn the heat down, and let the whole thing simmer, covered, for 1.5-2 hours, or until the greens are mostly softened. (Ifusing dry beans, add them in this step) (I like to add couple of T of butter to flavor it more).

4. About an hour into the simmer, add the dried limes (any sooner and they will turn the stew bitter), pushing them down into the liquid. They will want to pop back up, so try to cover them with a few pieces of meat to keep them submerged.

5. Finally, add the drained kidney beans, and cook another 30 minutes. Check your seasoning level, adding more lemon juice if needed (before you do, though, press down on the dried limes to get them to release the liquid they've absorbed)
