One Bowl Carrot Cake -kfp (gluten Free

3 large eggs
2 TBS of either butter/coconut oil(refined is great too )or margarine
2 TBS unsweetened apple sauce
1/2 cup maple syrup (followers told me they used honey instead and was great)
1 cup shredded carrot (2 medium carrots)
1 tsp cinnamon
1 ½ cup almond flour
1/2 cup arrowroot starch or potato starch
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt

Preheat your oven to 175°C (350°F)
And prepare a loaf pan
In a mixing bowl add in the eggs,oil/butter,Apple sauce ,maple syrup ,carrots and cinnamon mix well.
Add in the almond flour ,arrowroot starch or potato starch ,baking powder,baking soda and salt Stir until well combined,don’t over mix .
4.Pour the batter into the prepared cake pan and spread it out evenly.
5.Bake for about 35-40 minutes, or until a toothpick inserted into the center comes out clean.
It may need less or more time so keep a close eye on it .
6.Remove the cake from the oven let it cool completely before slicing.
7.Once cooled, you can optionally frost the cake with your favourite frostings such as cream cheese frosting or serve it the way I did ,it’s delicious!
