red cabbage and apple slaw with citrus dressing

CITRUS DRESSING

1 tablespoon fresh orange juice

1 tablespoon fresh lemon juice

3 tablespoons olive oil

1 tablespoon honey

1 tablespoon grainy mustard

1 tablespoon apple cider vinegar

Salt and pepper to taste

SLAW

1 bunch kale, stems removed, chopped into small strips

2 cups finely chopped red cabbage

2 red apples, chopped into matchsticks

1 large carrot, chopped into matchsticks

1 medium red onion, finely chopped

½ cup finely chopped fresh mint

½ cup dried cranberries

Yöntemler

In a mason jar or small mixing bowl, combine all the dressing ingrediernts. Mix well and set aside.

In a large salad bowl, place the kale, red cabbage, apples, carrots, onion, and mint. About I minutes before serving, pour the dressing over the salad and toss well to make sure the dressing soaks into the kale and cabbage. Sprinkle the dried cranberries on top!

This salad can be stored in an airtight container in the fridge for up to 3 days.
