500g strong white bread flour (+ extra for dusting)

7g instant dried yeast

7g salt

40g caster sugar

40g unsalted butter, cut into small pieces, softened

320ml (ish) warm water

Yöntemler

Tip flour, yeast, salt, sugar, butter and about 200ml water into a bowl. Stir to mix, adding more of the water, at this point it should be soft but not too wet, add extra flour or water if you need it.

Knead it with your hands until it’s smoother and resembles dough. Cover and leave to rise until doubled in size, usually about two hours.

Lightly flour a surface and tip the dough onto it. Fold it in on itself to knock the air out, kneading it and bit more.

Weigh the ball of dough and divide it by 12. Knead and shape each piece, using extra flour if it gets too sticky. Place each one on a lined baking tray.

Once all the balls are shaped, leave them to prove for another hour or so until they’re doubled in size.

Dust the top of the rolls with flour before putting them into a hot oven (around 200°C) for 12-15 minutes, or until golden brown. Keep an eye on them so they don’t burn.

Leave them to cool, or enjoy warm slathered in butter. They also freeze really well (if they last that long 😅)
