3 cups cottage cheese (the higher fat and better quality, the creamier the ice cream! It really makes a difference.)
1/3 cup maple syrup
1 teaspoon vanilla extract
1/2 teaspoon pure peppermint extract
1/2 teaspoon spirulina (optional, for color)
1 cup chocolate chips (or more!)
OPTIONAL: fresh mint (for garnish)

Combine the cottage cheese, maple syrup, vanilla, peppermint, and spirulina (optional) in a blender.
Blend until smooth, then pour into a container with an airtight lid and freeze for 1 hour.
Mix in the chocolate chips, then add the lid back on and freeze for another 3-5 hours.
Remove from the freezer and let thaw for 15-20 minutes on the countertop.
Break it up with a spoon, then give it a good mix.
Scoop, add extra chocolate chips, and enjoy!

The secret to getting a creamy texture is to let the ice cream thaw on the countertop for 15-20 minutes, then break it up with a spoon, give it a good mix, and THEN scoop with an ice cream scoop.
