Chicken Burrito Bowl

1 lb of chicken breast (grilled and sliced)

1 can (15 oz) of black beans (drained and rinsed)

2 cups of white or brown rice (cooked)

1/2 cup of shredded cheese (cheddar or Mexican blend)

1 Can of Corn

2 Bell Peppers

1. Grill Chicken:

• Preheat the grill to medium-high heat.

• Season the chicken breast with your preferred spices.

• Grill the chicken for about 6-8 minutes per side or until fully cooked.

• Slice the grilled chicken into strips.

2. Cook Rice:

• In a saucepan, bring 4 cups of water to a boil.

• Add 2 cups of rice and a pinch of salt.

• Reduce heat, cover, and simmer for 18-20 minutes or until the rice is tender.

• Fluff the rice with a fork.

3. Prepare Veggies:

• Slice bell peppers and onions.

• Sauté the veggies in a pan with a bit of oil until they are tender.

• Add corn to the mix and cook for an additional 2-3 minutes.

4. Warm Beans:

• In a separate pot, heat the black beans (drained and rinsed) until warmed through.

5. Assemble the Bowl:

• In individual bowls, layer the cooked rice, grilled chicken, sautéed veggies, and black beans.

6. Add Cheese:

•Sprinkle shredded cheese on top of each bowl for a melty finish.

7. Top with Extras:

•Add salsa, guacamole, sour cream, and chopped cilantro as desired
