Quick and Delicious Cinnamon Rolls

Rolls:
1 ¾ cup warm water
1/4 cup and 2 TBS sugar
1 tablespoon active dry yeast
2 eggs
1/4 cup coconut oil (or any oil)
1/2 T salt
5-6 cups unbleached flour
Filling:
5 Tablespoons butter,softened but not melted
3/4 cup brown sugar mixed with 1 teaspoon cinnamon
Frosting:
1/2 cup salted butter, softened
4 oz. cream cheese, softened
1/2 tablespoon milk
2 1/2 cups powdered sugar
1/2 teaspoon vanilla extract
1/8 teaspoon salt

In a large bowl or mixer with the dough hook, combine sugar, warm water, and yeast. Mix briefly then cover, and let yeast dissolve for 10 minutes.
Mix in the eggs, oil, and salt. Add the flour one cup at a time and mix well between each cup. You have enough flour when the dough doesn’t stick to the side of the bowl, and it is tacky but doesn’t stick to your fingers. Knead or let the mixer run for about five minutes. (If using a mixer, cover the dough to keep the heat inside)
Cover the dough and let it rise for 10 minutes. Place dough on a floured surface and roll into a long rectangle. Spread the softened butter across the dough, and evenly sprinkle the cinnamon/brown sugar mixture.
There are two ways to divide for each roll.
Tightly roll dough up into one long snake. Using cinnamon dental floss, or thread, cut the dough into 16 even slices.
Before rolling up, cut into 1 inch strips and roll each piece individually (as shown in video)
Spray a cookie sheet (I used individual pans here) and evenly lay out all the cinnamon roll rounds-will make 16-18 rolls Cover and let rise 10-30 minutes.
Bake at 375 for 14-15 minutes.
While rolls are baking, make the frosting. With a mixed, combine the butter and cream cheese. Beat together for 2-3 minutes until light and fluffy. Then add the milk, vanilla, salt, and powdered sugar. Mix to combine then spread on slightly warm cinnamon rolls.
