Sneaky Bok Choy Rice

1-2 tbsp ginger, minced

1 scallion, minced

1 shallot, minced

2 cloves garlic, minced

4 baby bok choy, finely chopped (tip: bok choy can hid a lot of dirt between the leaves, so soak it in salt water to remove the dirt)

2 cups of rice

Marinade:

1 tbsp honey

1/2 lime juice

1 ½ tbsp tamari

2 tsp fish sauce

1/2 tsp ginger, grated

1 clove garlic, grated

1 tbsp olive oil

1 tsp potato starch

4 chicken thighs

1) add honey, lime juice, fish sauce, tamari, grated ginger, grated garlic, oil, and starch to a mixing bowl. TIP: mix the honey and lime first to break down the honey with the acid. add your chicken and marinate for at least 20-30 minutes

2) add minced ginger and garlic, shallots, and scallions to a hot pan with oil. sauté for 2 minutes before adding in the bok choy. sauté for a further 2 minutes and take off the heat

3) cook the marinated chicken on a grill or in a pan until nice and brown

4) mix cooked veggies into the rice

5) plate and serve
