Protein Muffins With Chickpeas

I made some with berries for my 1 year old and some with chocolate chips for me and the husband and WOW.

1 can chickpeas, rinsed (SUPER WELL, this matters for flavor) and drained

½ cup creamy natural peanut butter

3 eggs

1/3 cup maple syrup*

1 tsp vanilla extract

1 tsp baking powder

¼ teaspoon salt

1/2 tsp cinnamon, optional

Add ins: chocolate chip, since im also sharing with my son, im gunna do a few muffins with chocolate chip and the other half with blueberries

use half cup of maple syrup if you like it to be sweeter 🍯

Preheat the oven to 180C, and use muffin liners or grease it properly so they don’t stick.

In a processor (or powerful blender), add all the ingredients except the toppings and blend well. If you know that your processor isn’t great at this, process the ingredients gradually by adding chickpeas with an egg and blending, followed by the other egg, blend etc.

Fold in the chocolate chips if you’re using them for the whole batch and scoop the batter into the tray, top with a few more chocolate chips - so they look nice lol.

Bake for 25 minutes, until a toothpick comes out clean!

Keeps well in the fridge for 2-3 days!
