Cashew Chicken

1 lb/500g chicken breast or thigh fillets, cut into 1”/2.5m pieces
Sauce:
1 tbsp cornstarch/cornflour
5 tbsp soy sauce (light or all-purpose, NOT dark soy)
2 tsp sesame oil, dash of white pepper
3 tbsp Chinese cooking wine* (Shaoxing wine, sub Mirin or dry sherry)
3 tbsp Oyster sauce
Stir Fry:
2 tbsp peanut oil
2 garlic cloves, minced, 1/2 onion, cut 1cm/1/3” pieces
1 small green capsicum/bell pepper, cut 1.5cm/1/2” pieces
6 tbsp water (90ml), 3/4 cup roasted unsalted cashews

Mix cornflour and soy sauce until lump free. Then mix in remaining Sauce ingredients.
Mix 2 tbsp Sauce with chicken, set aside 10 minutes+.
Heat oil over medium high heat in a wok. Add the garlic and onion, cook 1 min. Add chicken, cook 2 min. Add capsicum, cook 1 min.
Pour the Sauce and water in, bring to simmer and cook for around 2 - 3 minutes or until it thickens and the chicken is cooked through. Stir through cashews.
Remove from stove, and serve with rice.
This is the ingredient that makes this taste like real take out. If you can’t consume alcohol, sub the cooking wine in the sauce AND the 6 tbsp of water with chicken broth low sodium.
