Crunchy, Delicious Pickled Cabbage! This Pickled Cabbage Is

How would you rate the crunch 1-10?

1 1/2-gallon jar

3-4 small heads of cabbage

2 cups apple cider vinegar

4 tablespoons kosher salt

1 Tb brown sugar

3-4 cloves garlic

1 Tb peppercorns

2-3 bay leaves

1-2 jalapeños, optional*

Cut the cabbage into 1/4’s or 1/8’s, leaving the stem intact. Rinse in cold water. Fill tightly into the jar. Add the remaining ingredients and fill the rest with filtered water. Seal tightly and turn the jar around to mix. Store in a cool, dark place for 2 days and enjoy. Store in the refrigerator.
