1 lb ground chicken
1/2 cup ricotta cheese
1/4 cup grated Parmesan
1/4 cup breadcrumbs
1 egg
2 cloves garlic, minced
1 teaspoon Italian seasoning

For the Spinach Alfredo Sauce
2 tablespoons butter
2 cloves garlic, minced
1 cup heavy cream
1 cup fresh spinach, finely chopped
1/2 cup grated Parmesan

How to Make It

Preheat the oven to 400°F and line a baking sheet with parchment paper. Lightly oil the surface.
In a mixing bowl, combine the ground chicken, ricotta, Parmesan, breadcrumbs, egg, garlic, Italian seasoning, salt, and pepper. Mix gently.
Shape into 1.5-inch meatballs and place on the prepared baking sheet.
Bake for 20–25 minutes, until fully cooked and lightly golden.
For the sauce, melt the butter in a saucepan over medium heat. Add garlic and cook 1–2 minutes.
Stir in the heavy cream and bring to a gentle simmer. Add the chopped spinach and Parmesan. Cook until the sauce is creamy and the spinach is wilted. Season to taste.
Add the baked meatballs to the sauce and spoon the Alfredo over them to coat. Adjust the thickness with a splash of warm water or milk if needed.
Serve warm with extra Parmesan and pepper.
