Luscious Lemon Bars (from Arizona paper)

Crust:

1 c flour

1/8 tsp salt

1/2 c icing sugar

8 tbsp (1/2 c) butter, melted not hot

Filling:

2 eggs

3/4 c sugar

1 1/2 tbsp flour

6 tbsp lemon juice

2 tsp zest

Oven rack - lower middle 325

8 x 8 pan. Line w parchment, overhang 2 sides (lifter).

Mix all crust ingredients. Press into pan. Bake 20 minutes m/l.

NOTE: DON'T MOVE RACK IF USING METAL PANS. BROWNS TOO MUCH.

Whisk together filling ingredients. Put on crust, bake 20 minutes m/l until just set.

DO NOT OVERBAKE. Sprinkle with icing sugar.
