Christmas tree pavlova recipe

4 egg whites, at room temperature
220g caster sugar
1/2 tsp white vinegar
1 1/2 tsp cornflour
100g white chocolate melts
300ml thickened cream
125g raspberries
200g strawberries, sliced
Slivered pistachios, to sprinkle

Step 1
To make the pavlova, preheat oven to 120°C/100°C fan-forced. Trace the shape of a Christmas tree onto a sheet of baking paper using the template (stencil above). Place paper, marked-side down, on a lightly greased baking tray.
Step 2
In a stand mixer fitted with the whisk attachment, whisk egg whites and a pinch of fine salt on medium-high speed for 1-2 minutes, until just foaming. Gradually add the sugar, whisking until sugar is completely dissolved after each addition.
Step 3
Continue whisking until medium-firm peaks form and all the sugar is completely dissolved. Add vinegar and cornflour and whisk until just combined. Spoon meringue onto the prepared tray and spread gently into your tree shape, using your template as a guide.
Step 4
Bake for 1 hour 30 minutes, or until meringue is crisp on the outside but not browned. Turn off oven and leave pavlova to cool in the oven with door slightly ajar.
Step 5
For chocolate stars, line a baking tray with baking paper. Melt chocolate in a small bowl in the microwave in 15-second bursts, stirring in between. Spoon into a small zip-lock bag and snip off a corner with scissors. Pipe star shapes onto the prepared tray and chill until set.
Step 6
Just before serving, place cream in the clean bowl of a stand mixer fitted with the whisk attachment. Whisk until soft peaks.
Step 7
To assemble, place meringue on a serving platter. Dollop over the cream and top with fruit and pistachios. Decorate with white chocolate stars and serve immediately.
