Foolproof Popovers

3 tbsp melted butter

2 eggs

1 c milk, warmed for 30 seconds in microwave to lukewarm

1 c all purpose flour

1 tsp kosher salt

Prep time 10 minutes

Cook time 40 minutes

Preheat oven to 400°

Coat muffin tins with 1 tablespoon of the melted butter. Put tins in oven for five minutes.

Mixed eggs with hand beater until light yellow. Add the warm milk and blend.

Add flour, salt and remaining butter. Mix till smooth.

Pour batter into hot muffin tins. Bake until golden, about 35 minutes. Serve warm.
