8 chicken drumsticks

5 garlic cloves

1 big shallot

5cm piece of ginger

2 pieces of lemongrass

2 tbsp curry powder (I like Baba’s)

1 tbsp turmeric powder

1 tsp sugar

Good pinch of salt

2 tsps chilli oil / 2 tsps chilli powder

2 1/2 tbsps potato starch

Handful of curry leaves (10-12) (optional but highly recommended !!)

Peel the garlic cloves and shallot, roughly chop. Also, roughly chop the ginger. Cut the ends off the lemongrass and chop into small pieces, then bash with the back of ur knife.

Put all of these apart from the lemongrass into a blender with a small glug of water and oil and blend until smooth, then add the lemongrass and blend gently so there are still some small bits of it.

Make a few slashes on each drumstick (this is so the marinade can get into the meat better and also rescues cooking time).

Add the drumsticks to a big bowl along with the blended paste made earlier. Add curry powder, turmeric powder, sugar, salt and chilli oil. Mix well then add the potato starch and give it another mix. Make sure to rub the chicken in the marinade as much as possible.

Add the chicken into the air fryer along with curry leaves and fry for 25 mins at 180c. Flip halfway and apply extra oil if looking dry. Enjoy ðŸŦķ🏞
