Biscotti (Almond Cookies)

1 pound 14 oz whole wheat pastry flour
2 pounds sugar
6 eggs
4 egg yolk
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons vanilla extract
1 pound 5 oz blanched almonds toasted
2 eggs beaten
วิธีทำ
Sift flour, baking powder and salt x2
Pour flour in bowl and make well in center
Add sugar, eggs, baking powder, salt, and vanilla
Gradually mix until smooth
Add almonds; knead 4-5 minutes
Dough should be stiff; add flour if necessary
Divide dough into 8 parts
Roll each piece on floured board into a log, 2" wide
Place on a greased and floured cookie sheet
Brush tops of dough with egg
Bake at 350 for 35 minutes
Remove; reduce oven to 325
Cut dough diagonally into 1" slices
Place cut side of cookie on sheet
Return to oven for another 15 minutes
Bake until browned
