Creamy Garlic Prawn Pasta

8 oz / 400g fettucine (or other long strand choice)
60 g / 4 tbsp salted butter
3 bags of frozen prawns (defrosted and drained)
3 teaspoons garlic substitute
1/2 cup dry white wine
1 cup / 250ml single cream
400ml vegetable broth
2 cups finely grated parmesan cheese
2 tbsp finely chopped parsley (if you have it)
Black pepper
Parmesan (for serving)
1 cup pasta water (collect before draining)
วิธีทำ
Bring to boil a large pot of water. Add pasta and cook per packet instructions MINUS 1 minute.
While the pasta is cooking, melt 2 tbsp of butter in a large non stick skillet over medium high heat. Add prawns and cook for 1 1/2 minutes on each side until just cooked through. Remove prawns.
In the same skillet, add 2 tbsp butter. Once melted, add wine and stir. Simmer for 2 minutes until wine mostly reduces.
While wine is reducing, stir garlic substitute into the tub of single cream and mix well to remove lumps. Now add the garlic cream, broth and parmesan into the skillet. Stir until the parmesan is melted, then leave to simmer for 3-4 minutes until it thickens slightly (will thicken more in next step).
Once pasta is cooked, just before draining, scoop out 2 cups of pasta cooking water and set aside. Drain pasta and return to pot.
Add the cooked prawns to the sauce and stir, then turn on heat under the pasta pot, and pour sauce and prawns over cooked pasta adding about 1/2 cup of reserved pasta water. Toss pasta (still on stove) and the sauce will thicken in about 30 - 45 seconds and start clinging to the pasta.
Take it off the stove before the sauce is as thick as you want - it will thicken more.
Sprinkle with most of the parsley and black pepper, check salt (add if needed). Toss again until the sauce consistency is to your taste. Add a tiny splash of pasta water if it gets too thick. Make sure it’s nice and saucy.
Serve immediately, garnished with remaining parsley and parmesan if desired.
