Here’s the Classic Mediterranean Orzo Salad Recipe

Ingredients* (serves 4)
1. 1 cup uncooked orzo pasta
2. 1 can (15 oz) chickpeas, drained & rinsed
3. 1 cup cherry tomatoes, halved
4. ½ cup Kalamata olives, sliced
5. ½ red onion, diced
6. 2 cups fresh spinach (or mixed greens), chopped
7. 2 tbsp olive oil
8. 1 tbsp lemon juice
9. 1 tsp Dijon mustard
10. 1 tsp dried oregano
11. Salt & pepper to taste
วิธีทำ
Cook orzo according to package, drain, & let cool.
In a large bowl combine chickpeas, tomatoes, olives, onion, & spinach.
Add the cooled orzo to the veggie mix.
Whisk olive oil, lemon juice, mustard, oregano, salt & pepper for the dressing.
Toss the salad with the dressing until everything’s coated.
Chill 30 min before serving for best flavor.
