Red Velvet Crinkle Cookies

½ cup unsalted butter (room temperature)
¾ cup light brown sugar
½ cup granulated sugar
2 large eggs (room temperature)
2 tsp vanilla extract
1 tsp red gel food coloring
2 cups all-purpose flour
¼ cup unsweetened cocoa powder
1 ½ tsp baking powder
½ tsp salt
½ cup granulated sugar (for rolling)
1 cup powdered sugar (for rolling)

In a large bowl with an electric hand mixer or the bowl of a stand mixer fitted with a paddle attachment, cream the unsalted butter, light brown sugar, and granulated sugar until light and fluffy. Add the eggs, vanilla extract, and red gel food coloring and mix until smooth.
Add in the all-purpose flour, cocoa powder, baking powder, and salt and mix on low speed until the cookie dough comes together.
Portion the cookie dough using a small cookie scoop and place the cookie dough balls on a baking sheet pan. Chill for at least 30 minutes.
Preheat the oven to 350℉ (177℃). Line baking sheet pans with silicone baking mats or parchment paper.
Roll the chilled cookie dough balls first in granulated sugar and then in powdered sugar.
Place the cookie dough balls on the prepared baking pan, allowing room for spreading. Bake for 8 to 10 minutes until the edges of the cookies are set and the centers are soft. Cool the cookies on the pan for 2 minutes and then transfer to a wire rack to cool completely.
