Apple Quinoa Bake

1/2 cup quinoa, rinsed
1 cup almond milk
2 apples, diced
1 tsp cinnamon
1/4 cup maple syrup
1/2 tsp vanilla extract
1/4 cup chopped almonds
1 tbsp coconut oil

วิธีทำ
1. Preheat the oven to 350°F (175°C) and grease a baking dish with coconut oil.
2. In a saucepan, combine quinoa and almond milk. Bring to a boil, then reduce heat and simmer for 15 minutes until liquid is absorbed.
3. In a bowl, mix cooked quinoa, diced apples, cinnamon, maple syrup, and vanilla extract.
4. Transfer the mixture to the greased baking dish and spread evenly.
5. Sprinkle chopped almonds on top.
6. Bake for 25-30 minutes until the top is golden brown.
7. Remove from oven and let cool for 5 minutes before serving
