Homemade Graham Crackers

3/4 cup whole wheat flour
3/4 cup all purpose flour
1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp ceylon cinnamon
6 tbsp unsalted butter, softened
1/3 cup light brown sugar
1 tbsp honey
1 egg, room temp
1/3 tsp salt
Instruktioner
In a medium bowl, whisk together flours, cinnamon, baking soda, baking powder, and salt.
Using an electric mixer, cream butter, brown sugar, and honey until fluffy, 2 to 3 minutes. Scrape down sides of bowl. With mixer on low speed, add egg, and mix until combined, Add flour mixture, 1/2 cup at a time, and mix until combined.
Once your ingredients look crumbly and can be pinched to hold form turn your dough out onto a surface and roll to form a ball. Wrapping parchment paper and refrigerate for 30 minutes. Between two sheets of parchment paper roll your dough out until it’s a quarter inch thick. Graham crackers are 5“ x 2.5“. Measure and trim your dough to make your crackers. Using a fork, score holes in your cracker. Repeat this process with your dose scraps until you have used all of your dough. Place crackers on a parchment line, baking sheet and place in the fridge for one hour.
Bake at 350 F for 12 minutes rotating halfway through until they are golden brown. Place on a wire rack to cool fully. If freezing, you can place in freezer safe bags, but make sure they have cooled or condensation will form and they will get soggy.
