Brownie Pudding (gf / Df)

¾ cup coconut oil, melted and cooled
4 large eggs
2 cups cane sugar
¾ cup cacao powder
½ cup almond flour
2 tsp vanilla extract
1 tbsp instant coffee
Instruktioner
Preheat oven to 325°F.
Melt coconut oil and allow it to cool while you prepare the rest of your cake.
Combine eggs and sugar in the bowl of a stand mixer or a large bowl and whip on high until at least doubled in size and creamy white in color, about 7 minutes.
Add in almond flour, vanilla extract and instant coffee then sift cocoa powder into the bowl.
Mix on low until just combined then gradually fold in your coconut oil until batter is smooth and uniform. You want to make sure it’s fully combined but not overmixed or you will deflate the batter.
Transfer to a greased 9x9 baking dish or 9 inch cake round and add to a larger baking dish. Fill the outside baking dish with water half way up your 9 inch pan to create a water bath.
Bake for 60 minutes then remove from the oven and allow the brownie pudding to set slightly before serving with your favorite ice cream.
