Brie and Bacon Gnocchi

This indulgent rich and creamy gnocchi is the perfect cheesy treat and it’s made all in one pan! 😋 if you love Brie, you’ll love this dish!

INGREDIENTS (serves 2)

5-6 maple bacon rashers, chopped

1 Teaspoon garlic

3 sprigs thyme

450g gnocchi

100ml cooking cream.

120g Brie, with rind removed (the creamier Brie the better, this may not work with the hard Brie)

Freeze brie for half hour to make it easier to remove rind

250ml chicken stock

Handful of baby spinach

Instruktioner

To a pan, fry the bacon rashers in 1 tbsp oil for 4-5 mins on medium-high heat until crispy

Remove from the pan and set aside.

Add the Brie and thyme and stir to melt then gradually add the chicken stock and stirring until the Brie is melted and a sauce is formed.

Add the uncooked gnocchi and cream stir for 5-10 minutes until the sauce has thickened and the gnocchi is cooked.

Add the bacon back in, and stir spinach in.

Serve and enjoy!
